BAR-BA-DEE-YO
-
Grape:
Palomino and Pedro Ximénez

Elaboration:
This brandy is aged following the Solera system of blending new and old wine to allow for complexity and flavours to develop. Fortifying grape spirits from distilled wineries are blended together then rounded with select quantities of aged Oloroso and Pedro Ximénez wines. It is aged for 18 months in Amercian oak barrels which have been infused with subtle flavours due to their prolonged use for ageing of Oloroso sherries. More than half the spirits used have a low alcohol content of not more than 70% volume hence allowing the range of aromas typical of the original wines to come through.
-
Taste:
Mahogany with golden highlights. On the nose it is fragrant with notes of noble wood combined with the flavours of dried fruit, raisins and almonds. Smooth and flavoursome, it is a rounded and pleasant mouthful.
-
Service:
On the rocks or as a long drink with a mixer.
