Vinification:
The Palomino grapes are hand picked, crushed, pressed and fermented off the skins in temperature controlled vats. The wine is then fortified to 17.5% to kill off the flor before being transferred to the bodegas in Sanlúcar to age in contact with the air. This process creates a sherry type known as Oloroso which is how the Barbadillo Cream begins its life. As the Oloroso ages, it turns a deep, dark brown and gains concentration. At the end of the Solera aging process, it is blended and sweetened with Pedro Ximenez and Moscatel to produce Barbadillo Cream Sherry.

Brilliant mahogany colour with reddish glints, aromas of pastries and wood on the nose. Sweet and silky on the palate with a satisfying long finish.
