Vinification:
The Palomino Fina grapes are hand picked and lightly pressed and only the free run juice is used for Manzanilla. The Palomino must then undergoes fermentation and the most delicate wine is chosen and fortified with a wine-based distilled spirit to bring the alcohol content to 15%. This wine is transferred to specific bodegas near the Atlantic Ocean where it is aged in typical Jerez casks made from American Oak. Because of the influence of the Atlantic breezes, the veil yeast or flor that develops on the surface is thick and healthy and imparts a unique flavour onto the wine. Over a timeframe of 6 to 10 years, this process transforms the wine into Manzanilla. The ageing system used is called the Solera System where the wine is moved from cask to cask allowing a traditional blending of new and older wines to take place. The percentage of wine moved and its frequency is essential to its success.

Tasting:
Clean tasting and a slightly more rustic style of Manzanilla, this has an appealing and honest scent on the nose and on the palate it is smooth and harmonious with hints of whisky, subtle saltiness and chamomile. Fresh, dry with good complexity and a persisting, pleasant flavour.

Service:
Manzanilla Solear should be drunk as young and fresh as possible and consumed within a week. It should be served well chilled. It is the perfect accompaniment to a range of starters such as cured ham, artichokes, asparagus, cold and hot soups, fish and shellfish. Try it also with sushi and wasabi peas!
