Vinification:
The Palomino Fina grapes are hand picked in bunches and lightly pressed and crushed. The wine is fermented off the grapes at 18 degrees in stainless steel vats for 10 days. The wine is then fortified to 15% with a wine-based distilled spirit before being transferred to specific bodegas in Sanlúcar which have less exposure to the Atlantic breezes so the flor does not develop as strongly as it would in a Manzanilla Cask. The lighter layer of flor allows a slight oxidation of the wine which gives it an earthy 'nuttiness'. On average it will spend about 5 years in the Solera system after which it is fined and filtered before bottling.

Tasting:
Pale straw colour with a fresh almond nose, delicate nuttiness and a pleasant dry finish.

Service:
Fino sherry should be drunk as young and fresh as possible and consumed within a week. It should be served well chilled. Serve with salty foods such as olives and ham and also seafood, oily fish in particular is an excellent accompaniment. Try it with spicy Asian and American style dishes.
